Here's a link to a thread we had on the DS board, but it should help you out with some ideas, especially for meat.
Yumm-o, are you hungry yet? LOL
I know I had to switch to dark meat whenever eating chicken - I've eaten breast meat 4-EVA!!! But I get stuck every time I try it now, no matter HOW well I chew it, unless its in alfredo or something.
HOWEVER, the Golden Plump flavored roasting chickens you buy in a bag are DA BOMB!!! Sweet BBQ (which really isn't SWEET at all!), is to DIE FOR! Moist as all get out, and super easy! (So easy, BAILEY usually puts 'em in the oven after school, and it's ready when I get home!) Kinda like buying a rotisserie chicken!
Imperfect does not = unsuccessful
I do a lot of chicken, but I will grill it on the George Foreman grill or use just a bit of olive oil and cook in in a skillet on the stove and then add water to pan while it cooks to keep it moist! One little dish I sort of concocted was to dice up some cooked chicken breast then mix in a pot black beans, salsa, and chicken and simmer for about 20 minutes (this would work really well in the crockpot too!) it has lots of protien because of the combo of beans and chicken. I also really enjoy taco salad, chili and curry chicken. Another good find is Sausage Sister & Me sausage they have a bunch of varieties including chicken sausage, pork, sausage, beef sausage and they mix then with really interesting spices and veggies. This week I had the Zeus Almighty chicken sausage with tomato and olives and mediterranian spices one sausage was 110 calories, 2 grams of fat and 19 grams of protien! I have only ever seen them at the Minneapolis Farmer's Market and at the local co-ops. I hope some of this info helps! Another good place for recipies is Sparkpeople.com they have a ton of great crockpot recipies! Happy cooking!
I love the Always Tender pork tenderloins, put in an internal meat thermometer to alarm when it gets to the right temp and it's done perfectly every time!! Nummy and always moist when you reheat it in the microwave, just brimming with moistness. They have lots of flavors too.
Great thread, I needed more ideas, I was getting in a rut and need to do some cooking and preparing again, I am running out.
